We are delighted to be working with Liz Knight, foraging course teacher and an author of three amazing books.

When Liz was in her 20s she bought a second hand wild flower ID book and found that the previous owner had scribbled notes in about how to eat the plants in the book – slowly she started eating them & became hooked, because wild food isn’t just free, nutritious and sustainable; it’s also often very delicious.

Since then she’s been on a mission to teach people about those plants. Her courses are designed to open your eyes to how the commonest of weeds can be transformed into the most exciting, nutritious and sustainable of foods.

A set lunch is also included on all of these courses. As well as general foraging walks, we are also offering specific courses for different needs.

Foraging Walk

25th April, 20th June, 5th September

 Join Liz for a full day of foraging. Arriving at the hotel for a 10am start, you will spend the morning on the Site of Special Scientific Interest at the hotel learning about all of the plants that you probably have at home too. You will collect herbs, flowers and plants throughout the morning, which you will then use in the afternoon to make a tincture to take home with you. A foraged lunch is included. The course will finish at 4pm.

Come and learn how to turn plants into a store cupboard of products to keep you well this winter. We’ll gather the last of the seasons edibles before chopping & infusing them into delicious treats with medicinal benefits. As well as discovering common wild and garden plants you can forage for health through winter, you’ll learn how to make oxymels, tinctures, syrups and teas including:  
 
  • Immune boosting elderberry, blackcurrant and elderflower syrup
  • Throat soothing honeysuckle glycerites 
  • Warming rosehip fire cider.

Women have used plants to support their hormones for far longer than we’ve had HRT. Come and spend the day discovering how to support your body during its cycles and through peri/ menopausal years with herbs and food. We’ll make teas and tinctures that cool sweats, support sleep, calm our nervous systems and will feast on on a hormonal balancing lunch.

The Wild Food with Liz Knight experience includes a guided foraging walk through the Forest of Dean, where you’ll learn how to identify seasonal edible plants, herbs and fungi safely. Depending on the experience chosen, the day may also include demonstrations, hands-on workshops, tincture or remedy making. All wild food experiences include a delicious foraged-inspired lunch at Tudor Farmhouse Hotel.

The plants and wild foods you’ll discover vary with the seasons, but may include wild garlic, nettles, elderflower, mushrooms, berries and medicinal herbs. The Forest of Dean and Wye Valley are rich in natural habitats, making them one of the best places in the UK to experience seasonal foraging.

We recommend wearing comfortable outdoor clothing and sturdy waterproof footwear suitable for woodland walks. Depending on the weather, waterproofs and warm layers may also be useful.
