Dubbed by The Guardian as “the Carluccio of the Wye Valley” our in-house forager Raoul van Den Broucke supplies the hotel with produce collected nearby and runs foraging expeditions that take guests off the beaten track. The crop depends on season and ranges from a wide variety of edible mushrooms, wild garlic and sorrel, bitter cress, pennywort, wimberries, sea beat, marsh samphire, edible flowers and wild strawberries.
